CHEF DARREN MACLEAN
Chef Darren MacLean is one of Canada’s most acclaimed chef-restaurateurs, leading the country’s only restaurant group with three concepts recognized on Canada’s 100 Best Restaurants list. EIGHT ranks sixth nationally, marking the highest placement ever for a Calgary restaurant. NUPO holds the 30th position for its progressive approach to sustainable dining, while Shokunin ranks 74th, recognized for redefining contemporary Japanese-inspired cuisine. MacLean was also honoured in Milan at The Best Chef Awards, becoming the only Calgary chef to receive this distinction and reinforcing his presence on the global culinary stage.
MacLean’s flagship, Shokunin, is a high-energy Japanese izakaya centred on charcoal cookery and refined small plates. A fixture on Canada’s 100 Best for six consecutive years, it has hosted more collaborations with Michelin-recognized and World’s 50 Best-affiliated chefs than any other restaurant in Canada.
NUPO, named after MacLean’s mother, opened in 2020 in partnership with Le Germain Hotels and quickly garnered national attention. The plant-forward restaurant serves vegetarian dishes, sushi, and large-format fish, supported by a dedicated fish dry-aging chamber and a strictly meat-free kitchen. Its 20-course Omakase Sushi Experience earned NUPO a place on Canada’s Best New Restaurants list and secured its debut on Canada’s 100 Best in its first year.
With only eight seats and eight courses, EIGHT represents MacLean’s most intimate expression of Canadian cuisine. Inspired by the country’s multicultural identity, the tasting menu explores Canada’s culinary landscape through diverse cultural influences. Reservations routinely book months in advance, and in 2025, MacLean and EIGHT were awarded One Knife – Excellent at The Best Chef Awards in recognition of their contribution to the international culinary community.
MacLean’s vision also extends to after EIGHT, an intimate speakeasy concealed behind the restaurant and conceived as a continuation of the dining experience. Reserved initially for EIGHT guests and later open to the public, the eight-seat parlour features a refined cocktail program inspired by Satoyama, rare spirits, and bespoke glassware.
Beyond his restaurants, MacLean continues to champion Canadian gastronomy internationally. He represented Canada as the country’s sole finalist on Netflix’s global culinary competition The Final Table and has spent significant time in Japan studying the cuisine that continues to inform his work. Committed to food as a cultural bridge, he regularly hosts international chefs in Calgary and collaborates with leading culinary figures worldwide.
Deeply dedicated to sustainability and community building, MacLean is also a respected speaker, educator, and culinary judge across Canada and abroad. Despite his international recognition, he remains focused on his kitchens, continually advancing the conversation around Canadian cuisine.
